  • 1 onion, diced

  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 6 cups beef broth (or vegetable broth)
  • 1/2 cup pearl barley
  • 1 tablespoon Worcestershire sauce (optional, for depth of flavor)
  • 1 tablespoon tomato paste
For Serving:
  • Chopped fresh parsley

Instructions:

  1. Sear the Beef: Heat olive oil in a large pot over medium-high heat. Add the beef pieces, season with salt and pepper, and sear for 4-5 minutes per side, until browned. Remove and set aside.
  2. Sauté the Veggies: In the same pot, add onion, carrots, and celery. Sauté for 5 minutes until softened, then stir in garlic, thyme, rosemary, and tomato paste, cooking for 1 minute.
  3. Simmer the Stew: Return the beef to the pot. Add beef broth, bay leaf, Worcestershire sauce, and barley. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour 15 minutes, stirring occasionally.
  4. Final Check: Remove the bay leaf, check seasoning, and adjust salt/pepper if needed. If the stew is too thick, add a splash of broth.
