  • 2 boneless, skinless chicken breasts

  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley (for garnish)
For the Roasted Potatoes:
  • 2 cups baby potatoes, halved
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried rosemary or thyme

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, toss baby potatoes with olive oil, salt, pepper, garlic powder, and rosemary/thyme. Spread them onto a baking sheet.
  3. In a small bowl, mix together paprika, salt, black pepper, oregano, and onion powder.
  4. Heat butter in a large oven-safe skillet over medium heat. Add garlic, then place chicken breasts in the pan. Sprinkle seasoning mix evenly over the chicken.
  5. Sear the chicken for 3-4 minutes per side, until golden brown. Add lemon juice to deglaze the pan.
