Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup feta cheese, crumbled (or dairy-free feta for vegan option)
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon dried oregano
  • Salt & pepper, to taste

Instructions:

  1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, feta, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss until well coated.
