Ingredients:
For the Stew:
- 1 lb (450g) beef chuck or stew meat, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 bay leaf
- 6 cups beef broth (or vegetable broth)
- 1/2 cup pearl barley
- 1 tablespoon Worcestershire sauce (optional, for depth of flavor)
- 1 tablespoon tomato paste
For Serving:
- Chopped fresh parsley
- Crusty bread (optional)
Instructions:
- Sear the Beef: Heat olive oil in a large pot over medium-high heat. Add the beef pieces, season with salt and pepper, and sear for 4-5 minutes per side, until browned. Remove and set aside.
- Sauté the Veggies: In the same pot, add onion, carrots, and celery. Sauté for 5 minutes until softened, then stir in garlic, thyme, rosemary, and tomato paste, cooking for 1 minute.
- Simmer the Stew: Return the beef to the pot. Add beef broth, bay leaf, Worcestershire sauce, and barley. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour 15 minutes, stirring occasionally.
- Final Check: Remove the bay leaf, check seasoning, and adjust salt/pepper if needed. If the stew is too thick, add a splash of broth.
- Serve Hot: Ladle into bowls, garnish with fresh parsley, and enjoy with crusty bread!
Serving Suggestions & Variations:
- Make it vegetarian by swapping beef for mushrooms and using veggie broth.
- Add potatoes or parsnips for extra heartiness.
- Swap barley for rice or lentils for a gluten-free version.
