This Traditional English Trifle dates back to the Renaissance and Victorian Era, when elaborate, layered desserts were a centerpiece of high-society dining. Ingredients:

For the Trifle Layers:
  • 1 sponge cake or pound cake, cut into cubes (about 4 cups)
  • ½ cup sweet sherry or fruit juice (for a non-alcoholic version)
  • 1 cup strawberry or raspberry jam
  • 1 ½ cups fresh berries (strawberries, raspberries, or blackberries)
  • 2 cups vanilla custard (homemade or store-bought)
  • 2 cups whipped cream
  • 2 tablespoons sliced almonds (for garnish)
  • 1 tablespoon grated chocolate (optional, for garnish)
For the Homemade Custard:
  • 2 cups whole milk
  • 3 egg yolks
  • ¼ cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Instructions:

Step 1: Make the Custard (If Homemade)
  1. In a saucepan, heat milk over medium heat until warm but not boiling.
  2. In a separate bowl, whisk egg yolks, sugar, and cornstarch until smooth.
  3. Slowly pour the warm milk into the egg mixture, whisking continuously.
  4. Return the mixture to the saucepan and cook over low heat, stirring until thickened (about 5 minutes). Remove from heat and stir in vanilla extract. Let cool.
Step 2: Assemble the Trifle
  1. Layer the Cake: Arrange half of the sponge cake cubes in the bottom of a large glass trifle dish.
  2. Soak the Cake: Drizzle half the sherry (or fruit juice) over the cake to soak it slightly.
  3. Add Jam & Fruit: Spread half the jam over the cake, then layer with half the fresh berries.
  4. Add Custard: Pour half the custard over the fruit layer.
  5. Repeat: Add another layer of cake, sherry, jam, berries, and custard.
  6. Top with Whipped Cream: Spread whipped cream over the top and smooth it out.
  7. Garnish & Chill: Sprinkle with sliced almonds and grated chocolate. Cover and refrigerate for at least 2 hours to let the flavors meld.
Step 3: Serve & Enjoy!

Scoop into serving bowls and enjoy this Victorian-era classic dessert with tea or after a special meal.

Serving Suggestions & Variations:

  • Make it chocolatey by adding chocolate cake and chocolate custard.
  • Use different fruits like peaches or cherries for a twist.
  • Swap sponge cake for ladyfingers for a more structured trifle.
