Ingredients:
For the Noodles & Veggies:

- 1 cup red bell pepper, thinly sliced
- ½ cup edamame or snap peas
- 2 green onions, chopped
- ¼ cup chopped peanuts (for garnish)
- Fresh cilantro & lime wedges (for serving)
For the Spicy Peanut Sauce:
- ¼ cup creamy peanut butter
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon lime juice
- 1 tablespoon maple syrup or agave
- 1 teaspoon sesame oil
- ½ teaspoon garlic powder
- ½ teaspoon ginger powder
- ½ teaspoon red pepper flakes (adjust to taste)
- 2-3 tablespoons warm water (to thin the sauce)
Instructions:
- Cook the Noodles: Cook rice noodles according to package instructions. Drain and rinse with cold water to prevent sticking.
- Prepare the Sauce: In a bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, sesame oil, garlic powder, ginger, and red pepper flakes. Add warm water 1 tablespoon at a time until the sauce reaches a smooth, pourable consistency.
