Ingredients:

For the Noodles & Veggies:
  • 8 oz rice noodles (or whole wheat noodles for extra fiber)
  • 1 cup shredded carrots
  • 1 cup red bell pepper, thinly sliced
  • ½ cup edamame or snap peas
  • 2 green onions, chopped
  • ¼ cup chopped peanuts (for garnish)
  • Fresh cilantro & lime wedges (for serving)
For the Spicy Peanut Sauce:
  • ¼ cup creamy peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon lime juice
  • 1 tablespoon maple syrup or agave
  • 1 teaspoon sesame oil
  • ½ teaspoon garlic powder
  • ½ teaspoon ginger powder
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 2-3 tablespoons warm water (to thin the sauce)

Instructions:

  1. Cook the Noodles: Cook rice noodles according to package instructions. Drain and rinse with cold water to prevent sticking.
  2. Prepare the Sauce: In a bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, sesame oil, garlic powder, ginger, and red pepper flakes. Add warm water 1 tablespoon at a time until the sauce reaches a smooth, pourable consistency.
  3. Toss Everything Together: In a large bowl, mix the cooked noodles, carrots, bell pepper, edamame, and green onions. Pour the peanut sauce over and toss well to coat.
