Ingredients:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/4 teaspoon ground cayenne (optional, for heat)
- 1 can (14 oz) diced tomatoes (or 3 fresh tomatoes, chopped)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3-4 large eggs
- 1/4 cup crumbled feta cheese (optional)
- Fresh parsley or cilantro, for garnish
- Warm pita bread or crusty bread, for serving
Instructions:
- Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add onion and bell pepper, cooking for 5 minutes until softened.
- Add Garlic & Spices: Stir in garlic, cumin, paprika, and cayenne, cooking for 1 minute until fragrant.
- Simmer the Sauce: Add diced tomatoes, salt, and black pepper. Let simmer for 10 minutes, stirring occasionally, until thickened.
- Add the Eggs: Make small wells in the sauce and carefully crack eggs into each well. Cover the pan and cook for 5-7 minutes, until the eggs are set but still slightly runny.
- Finish & Serve: Sprinkle with feta cheese and fresh herbs. Serve immediately with warm pita or bread.
