Ingredients:
For the Chilaquiles:
- 4 corn tortillas, cut into triangles (or 2 cups store-bought tortilla chips)
- 1 cup red or green salsa (homemade or store-bought)
- ½ cup chicken or vegetable broth (to thin the salsa)
- 2 eggs
- ½ cup crumbled queso fresco (or feta)
- ¼ cup sour cream or Mexican crema
- ¼ cup chopped fresh cilantro
- ½ small red onion, sliced thin
- 1 avocado, sliced (optional)
- 1 teaspoon oil (for frying)
Instructions:
Step 1: Crisp the Tortillas (Skip if Using Chips)
- Heat oil in a skillet over medium heat. Fry the tortilla triangles until crispy and golden, then remove and drain on paper towels.
Step 2: Simmer the Tortillas in Salsa
- In the same skillet, pour in salsa and broth. Bring to a light simmer.
- Add the crispy tortillas, stirring gently to coat. Cook for 2-3 minutes, letting them soften slightly while keeping some crispness.
Step 3: Cook the Eggs
- In a separate pan, fry the eggs sunny-side up or to your preferred doneness.
Step 4: Assemble & Serve
- Divide the salsa-coated tortillas onto plates. Top with fried eggs, crumbled queso fresco, sour cream, red onion, cilantro, and avocado.
- Serve immediately with a side of refried beans or fresh fruit.
