Ingredients:

For the Filling:
  • 2 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 celery stalk, diced
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk (or heavy cream for extra richness)
  • 2 cups cooked shredded chicken (rotisserie works well!)
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon paprika
For the Crust:
  • 1 sheet store-bought pie dough (or homemade, if preferred)
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Prepare the Filling: In a large skillet, melt butter over medium heat. Add onion, garlic, carrots, and celery, cooking for 5-7 minutes until softened.
  3. Make the Sauce: Stir in flour, cooking for 1 minute. Slowly whisk in chicken broth and milk, stirring constantly until thickened (about 3-5 minutes).
  4. Add Chicken & Veggies: Stir in shredded chicken, peas, salt, pepper, thyme, and paprika. Remove from heat.
  5. Assemble the Pie: Pour the filling into a 9-inch pie dish. Lay the pie crust over the top, crimping the edges. Cut small slits in the center for steam to escape. Brush with egg wash.
  6. Bake: Place on a baking sheet and bake for 30-35 minutes, until golden brown and bubbly.
  7. Cool & Serve: Let sit for 5 minutes before serving. Enjoy warm!

Serving Suggestions & Variations:

  • Add mushrooms or potatoes for extra heartiness.
  • Swap chicken for turkey (great for leftovers!).
  • Use puff pastry instead of pie dough for a flakier top.
