Ingredients:
- 2 cups heavy cream
- 4 large egg yolks
- ¼ cup granulated sugar (plus extra for topping)
- 1 teaspoon vanilla extract (or ½ vanilla bean, seeds scraped)
- ¼ teaspoon salt
Instructions:
Step 1: Prepare the Custard
- Preheat oven to 325°F (160°C).
- In a saucepan, heat heavy cream over medium heat until steaming but not boiling. Remove from heat and stir in vanilla extract (or vanilla bean seeds).
- In a separate bowl, whisk egg yolks, sugar, and salt until pale and creamy.
- Slowly pour the warm cream into the egg mixture, whisking continuously to prevent curdling.
Step 2: Bake the Custard
- Strain the custard mixture through a fine mesh sieve into ramekins to remove any lumps.
- Place ramekins in a deep baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins (this creates a gentle water bath).
- Bake for 30-35 minutes, or until the custard is just set but still slightly jiggly in the center.
Step 3: Chill & Caramelize
- Remove from the oven, let cool, then refrigerate for at least 2 hours (or overnight).
- Before serving, sprinkle a thin, even layer of sugar over each custard.
- Use a kitchen torch to caramelize the sugar until golden and crisp. If using an oven broiler, place ramekins under the broiler for 1-2 minutes, watching closely to prevent burning.
