Ingredients:

  • 200g dark chocolate (70% cocoa or higher), chopped
  • 100g unsalted butter (or dairy-free alternative)
  • ¾ cup sugar (or coconut sugar for refined sugar-free option)
  • 1 teaspoon vanilla extract
  • 4 large eggs, separated
  • 1½ cups almond flour
  • ¼ teaspoon salt
  • Optional: cocoa powder or powdered sugar, for dusting

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake tin with parchment paper.
  2. Melt chocolate and butter together in a heatproof bowl over a pot of simmering water (double boiler). Stir until smooth. Let cool slightly.
  3. Stir in sugar, vanilla, and egg yolks one at a time.
  4. Fold in the almond flour and salt until fully combined.
  5. In a separate bowl, whisk egg whites to stiff peaks. Gently fold into the chocolate mixture in thirds, keeping as much air as possible.
  6. Pour into prepared tin and bake for 25–30 minutes, until the center is just set and a toothpick comes out with moist crumbs.
  7. Cool completely in the tin. Dust with powdered sugar or cocoa powder before serving.
