Ingredients:
- 200g dark chocolate (70% cocoa or higher), chopped
- 100g unsalted butter (or dairy-free alternative)
- ¾ cup sugar (or coconut sugar for refined sugar-free option)
- 1 teaspoon vanilla extract
- 4 large eggs, separated
- 1½ cups almond flour
- ¼ teaspoon salt
- Optional: cocoa powder or powdered sugar, for dusting
Instructions:
- Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake tin with parchment paper.
- Melt chocolate and butter together in a heatproof bowl over a pot of simmering water (double boiler). Stir until smooth. Let cool slightly.
- Stir in sugar, vanilla, and egg yolks one at a time.
- Fold in the almond flour and salt until fully combined.
- In a separate bowl, whisk egg whites to stiff peaks. Gently fold into the chocolate mixture in thirds, keeping as much air as possible.
