Ingredients:
- 8 oz (225g) elbow macaroni or pasta of choice
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup grated sharp cheddar cheese
- ½ cup mozzarella cheese
- ½ cup grated parmesan cheese
- ½ teaspoon mustard powder (optional)
- Salt and pepper to taste
For the Topping:
- ½ cup breadcrumbs
- 1 tablespoon melted butter
- 2 tablespoons parmesan cheese (optional)
Instructions:
- Preheat oven to 375°F (190°C). Grease a small baking dish.
- Cook the pasta until just al dente. Drain and set aside.
- In a saucepan, melt butter, then whisk in flour to form a roux. Cook for 1 minute, then slowly add milk, whisking to avoid lumps.
- Simmer until slightly thickened, then stir in cheddar, mozzarella, parmesan, mustard powder, salt, and pepper.
- Add the pasta to the cheese sauce and stir to coat.
- Pour into baking dish. Mix breadcrumbs with melted butter and sprinkle over the top with a little extra parmesan if desired.
- Bake for 20–25 minutes until bubbly and golden on top.
- Let rest for a few minutes before serving.
