Ingredients:

  • 8 oz (225g) elbow macaroni or pasta of choice
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup grated sharp cheddar cheese
  • ½ cup mozzarella cheese
  • ½ cup grated parmesan cheese
  • ½ teaspoon mustard powder (optional)
  • Salt and pepper to taste
For the Topping:
  • ½ cup breadcrumbs
  • 1 tablespoon melted butter
  • 2 tablespoons parmesan cheese (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a small baking dish.
  2. Cook the pasta until just al dente. Drain and set aside.
  3. In a saucepan, melt butter, then whisk in flour to form a roux. Cook for 1 minute, then slowly add milk, whisking to avoid lumps.
  4. Simmer until slightly thickened, then stir in cheddar, mozzarella, parmesan, mustard powder, salt, and pepper.
  5. Add the pasta to the cheese sauce and stir to coat.
  6. Pour into baking dish. Mix breadcrumbs with melted butter and sprinkle over the top with a little extra parmesan if desired.
  7. Bake for 20–25 minutes until bubbly and golden on top.
  8. Let rest for a few minutes before serving.
