Ingredients:

  • 2 medium potatoes, diced small

  • 1/2 red bell pepper, diced
  • 1/2 cup breakfast sausage (crumbled or chopped – pork, chicken, or veggie)
  • 4 large eggs
  • 1/4 cup milk (optional, for fluffier eggs)
  • Salt and pepper, to taste
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1 green onion, sliced (for garnish)
  • Hot sauce (optional, for serving)

Instructions:

  1. Cook the Potatoes: Heat oil or butter in a large skillet over medium heat. Add diced potatoes and cook, stirring occasionally, until golden and crispy—about 10–12 minutes. Season with salt and pepper.
  2. Add Veggies & Sausage: Add onion and bell pepper, and sauté until softened, about 3–4 minutes. Stir in cooked sausage and cook for another 2 minutes to heat through.
  3. Scramble the Eggs: In a bowl, whisk together eggs, milk, salt, and pepper. Push the skillet mixture to one side and pour the eggs into the empty side of the pan. Scramble gently until just cooked.
  4. Combine & Finish: Mix everything together in the skillet and sprinkle with shredded cheese. Cover for 1–2 minutes until the cheese is melted.
