Description:

This Classic Beef & Cheddar Melt is a warm, satisfying, and flavor-packed lunch that will keep you full and fueled for the rest of the day! Featuring tender roast beef, gooey melted cheddar cheese, and a rich, tangy sauce, all sandwiched between crispy, buttered bread, this hearty lunch favorite is perfect for when you need something filling and delicious. 🥩🧀🥪

Ingredients:

  • 4 slices of thick-cut bread (sourdough or rye works best)
  • 1/2 lb (225g) thinly sliced roast beef (deli-style or leftover beef)
  • 4 slices sharp cheddar cheese
  • 2 tablespoons butter, softened
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard (or spicy brown mustard)
  • 1 tablespoon horseradish sauce (optional, for extra kick)
  • 1/2 teaspoon black pepper

Instructions:

  1. Make the Sauce: In a small bowl, mix mayonnaise, mustard, horseradish sauce (if using), and black pepper.
  2. Assemble the Sandwiches: Spread the sauce on one side of each bread slice. Layer cheddar cheese, roast beef, and another slice of cheddar on two slices of bread, then top with the remaining slices.
  3. Butter the Bread: Spread butter on the outside of each sandwich.
  4. Grill the Sandwiches: Heat a skillet or griddle over medium heat. Place sandwiches in the pan and cook for 3-4 minutes per side, pressing slightly, until golden brown and crispy with the cheese fully melted.
  5. Serve & Enjoy: Slice in half and serve warm with chips, pickles, or a side salad.

Serving Suggestions & Variations:

  • Make it spicy by adding jalapeños or hot sauce to the sandwich.
  • Swap cheddar for Swiss or provolone for a different cheesy twist.
  • Use sourdough, ciabatta, or a toasted brioche bun for extra flavor.
