Ingredients:
- 2 medium potatoes, diced small
- 2 tablespoons olive oil or butter
- 1/2 small onion, diced
- 1/2 red bell pepper, diced
- 1/2 cup breakfast sausage (crumbled or chopped – pork, chicken, or veggie)
- 4 large eggs
- 1/4 cup milk (optional, for fluffier eggs)
- Salt and pepper, to taste
- 1/2 cup shredded cheddar or Monterey Jack cheese
- 1 green onion, sliced (for garnish)
- Hot sauce (optional, for serving)
Instructions:
- Cook the Potatoes: Heat oil or butter in a large skillet over medium heat. Add diced potatoes and cook, stirring occasionally, until golden and crispy—about 10–12 minutes. Season with salt and pepper.
- Add Veggies & Sausage: Add onion and bell pepper, and sauté until softened, about 3–4 minutes. Stir in cooked sausage and cook for another 2 minutes to heat through.
- Scramble the Eggs: In a bowl, whisk together eggs, milk, salt, and pepper. Push the skillet mixture to one side and pour the eggs into the empty side of the pan. Scramble gently until just cooked.
