Ingredients:

  • 1.5 lbs (680g) beef stew meat or chuck roast, cut into bite-sized pieces
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz (225g) cremini or white mushrooms, sliced
  • 1 ½ cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ cup sour cream (or Greek yogurt for a lighter option)
  • 2 tablespoons cornstarch + 2 tablespoons water (to thicken)
  • 12 oz egg noodles (or rice, for serving)
  • Fresh parsley, for garnish

Instructions:

  1. Prep the Beef & Veggies: Place beef, onions, garlic, and mushrooms into the slow cooker.
  2. Add the Flavor: Pour in beef broth, Worcestershire sauce, Dijon mustard, paprika, salt, pepper, and thyme. Stir to combine.
  3. Cook Low & Slow: Cover and cook on LOW for 6-8 hours (or HIGH for 3-4 hours) until the beef is tender.
  4. Thicken the Sauce: In a small bowl, mix cornstarch and water. Stir into the slow cooker, then let cook uncovered for 15 more minutes until thickened.
  5. Finish with Creaminess: Stir in sour cream (or Greek yogurt) for a rich, velvety sauce.
  6. Serve & Enjoy: Cook egg noodles according to package instructions, then ladle the beef stroganoff over the noodles. Garnish with fresh parsley and enjoy!

Serving Suggestions & Variations:

  • Make it low-carb by serving over cauliflower rice or zucchini noodles.
  • Swap beef for chicken or mushrooms for a lighter variation.
  • Add a dash of red wine for extra depth of flavor.
